I am 5'9" 170 lbs have a 7 ft challenger eastern roundtail surfboard with a variable skeg that I rode when I was a kid and only 115lbs. Am I too big for my board?

Dimension wise, you're not too big for your board at all. If you want to get more progressive with your surfing then you actually might want to downsize, otherwise you're good to go.
